Banana and Walnut Bread

This is a favourite of mine and really easy to make. If you’ve been to one of my coffee
mornings, then you’ve probably tried it already. Sally Liddle
Makes one 2lb/1kg loaf. Preparation time: 25-30 mins. Cooking time: 50-60 mins.
80z/225g self-raising flour
pinch of salt
4oz/100g softened butter
4oz/100g caster (superfine) sugar
½ teaspoon vanilla essence
2 large eggs
9oz/250g ripe bananas, weighed after peeling, mashed
2oz/50g chopped walnuts
3oz/75g sultanas (golden raisins)
Preheat the oven to 350°f/180°c/gas mark 4. Grease a 2lb/1kg loaf tin. Sift the flour and salt together. In a separate bowl cream the butter and sugar together until fluffy and add the vanilla. Beat in the eggs, one at a time, adding a little of the sifted flour after each egg. Fold the remaining flour and then the mashed bananas into the mixture. Fold in the nuts and fruit. Spoon into the prepared tin and bake for 50-60 minutes or until a skewer inserted into the centre comes out clean. Cool in the tin for 5 minutes then turn out onto a wire rack to cool completely
